Onja: Rainbow Watermelon Salsa

I enjoy a refreshing salsa just like any other person and what’s more refreshing than adding watermelon to one? Not only is this salsa full of colour it is packed with flavour. From the sweetness of the watermelon to the herb flavour of the dhania to the coolness of the cucumber. Not much is needed to dress this salsa as the juices of the melon combined with some salt, black pepper and chat masala work the magic. 

Another great thing, you probably have all in the ingredients in your kitchen well expect the chat masala but we’ll get to that later.

The salsa comes together pretty fast,all you need is to dice up the ingredients. Don’t bother much with the watermelon seeds you won’t even notice them.

Once everything is diced up nicely,combine in a bowl.

rainbow watermelon salsaFor the seasoning add some salt, freshly ground black pepper and some chat masala. You can get the chat masala from the spice aisle in any major supermarket. I found that the masala adds a lovely dimension to vegetable salads.

  • 2 cups cubed watermelon
  • 1 small red bell pepper, diced
  • 1 small green bell pepper, diced
  • 1/2 large yellow bell pepper, diced
  • 1/2 cucumber diced
  • 1 medium red onion diced
  • A handful of dhania, roughly chopped
  • Salt and pepper to taste
  • Chat masala,optional

Instructions

In a large bowl combine all the ingredients.

Season with salt,black pepper and chat masala.

Best served chilled.

Enjoy with some barbecued meat or grilled chicken
