Blueberry Banana Pancakes

It’s berry season and there are blueberry offers* everywhere you look so let’s make some pancakes.

The first time I tasted blueberries I was underwhelmed, all those years of seeing them on TV, I honestly thought they would be out of this world. Truth is blueberries are pretty plain when eaten on their own but when incorporated in pancakes, muffins, cakes, smoothies, ice cream etc they come alive.
Back to the pancakes, these pancakes are delightfully delicious and perfect. `

Whenever a recipe calls for ripe bananas always use the slightly overripe ones. They are sweet and mash beautifully.
I had one of my daughters helping me on this particular day so you will see some small hands in some photos.

I usually mash the bananas with a fork and I prefer some small chunks of banana. You can mash it completely if you aren’t a fan of banana chunks.
Then add the eggs, one by one.Always work with room temperature eggs, so in case you store your eggs in the fridge remove them at least thirty minutes before using them.

Mix up the dry ingredients.
Whenever you see me working with ripe bananas just know cinnamon or nutmeg is about to feature. For this recipe I used ground cinnamon. Cinnamon is such a warm spice.

This recipe also uses mala, which makes the pancakes fluffy and soft. Into the egg and banana mixture add the mala and vanilla essence and stir.

Now to combine the dry and wet ingredients together.

Also gently fold in the clean blueberries.

The secret to soft pancakes is not over mixing and resting the batter. Once the dry ingredients are combined don’t stir any further, I know there might be lumps but that’s ok.

Heat up your pancake griddle. I use my trusty stainless steel pan. Add some oil and let that heat up over medium heat.
I love using a quarter cup measure to scoop out the batter to achieve similar sized pancakes.

Alternatively, you choose to put the blueberries on the pancakes as they cook. Can either be fresh or frozen.

Let the pancakes cook until bubbles on the surface form and pop.

Then flip those babies.The underside will cook within no time.

There you have it, blueberry banana pancakes.
Drizzle over your favourite pancake syrup, I prefer honey and top off with some sliced ripe bananas and blueberries.

Ingredients

3 – 4 ripe bananas

2 eggs

1 1/2 cups maziwa mala

1/4 cup sugar

1 tsp vanilla essence

1 1/2 cups all purpose flour

1 1/2 tsp baking powder

1 tbsp cinnamon

Pinch of salt

Fresh / frozen blueberries
