Cinnamon French Toast

Happy New Month!

Breakfast has to be my favourite meal of the day and boy do I enjoy making it. Bread is one of those staple breakfast accompaniments in our home and I love serving it differently,whether it’s by applying different spreads from peanut butter to avocado or using it for french toast.

French toast or toast mayai as we fondly call it here in Kenya is pretty easy to make and a lovely accompaniment for beverage of choice. It’s ideal to use a day old bread as opposed to freshly baked to ensure the bread is sturdy enough to soak up all the egg goodness. This works with just about any type of bread, white, wholemeal, rye,baguettes whatever you prefer.

I love the adding cinnamon to just about anything and this time round I added it in the french toast thus Cinnamon French Toast.

In a bowl combine the eggs,milk,ground cinnamon and vanilla bean seeds. I love using vanilla beans,however you can substitute them for vanilla extract or essence.

Using a fork whisk all the ingredients together, then one by one soak in the slice of bread.

cinnamon-french-toast-mayai-leotunapikaUsing a fork or pair of tongs ensure both sides are coated with the egg mixture then lift from the mixture and let the excess drip off.

In a lightly greased heated pan,place the bread.

In the meantime,combine some ground cinnamon with some sugar, I opted to use icing sugar since I wanted to sift it over the cinnamon french toast.

As soon as the slice of bread is off the pan, sprinkle over the cinnamon sugar mixture on both sides.

Repeat the toasting and coating procedure for all your slices of bread.

Serve them warm with some sliced strawberries and a sprinkling of honey.

Note: Since I usually sprinkle honey over my cinnamon french toast, I omit sugar from the egg mixture, however if your prefer you can add sugar to the egg mixture.

  • 2 eggs
  • 4 tbsps milk
  • 1/2 tsp ground cinnamon
  • 1 tsp sugar (optional)
  • 1 vanilla bean or 1 tsp vanilla essence
  • 4 slices of bread
  • Oil for frying
  • for the coating

  • 1 tsp ground cinnamon
  • 1 tsp sugar

Instructions

In a wide bowl combine the eggs, milk, ground cinnamon, sugar and the vanilla.

Whisk with a fork until combined.

One by one soak your slices of bread.

On a lightly greased heated pan, place the coated slice of bread.

Cook on both sides.

Once done set aside and coat with the cinnamon sugar coating.

Repeat the toasting and coating procedure for all the slices of bread.

Serve warm with some sliced strawberries and drizzle over some honey.

Enjoy.

      You’re welcome.
      Yes they are a little moist. In case you don’t like the moistness, don’t the bread stay in the egg mixture for long before cooking it.
