In case you haven’t guessed by now, we love white meat hence the reason the blog is filled with chicken and fish recipes.
Some time last I was craving some chicken and I thought of preparing this to serve with ugali and sukuma wiki. Sadly the supermarket was out of chicken legs so I decided to buy the drumsticks instead and with that my menu changed 🙂
Still not sure of how to prepare the drumsticks I googled various recipes and settled on a hybrid of a few of them.
Ingredients:
500 gm chicken drumsticks – about 6, washed and patted dry
3 tablespoons all purpose flour
1 tablespoon paprika
1 teaspoon curry powder
1 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon butter, I used unsalted
Equipment:
Baking dish
Aluminium foil
Ziploc bag/ paper bag
Start by pre heating your oven at 425°F or 220°C
Baking chicken can be a bit messy especially when it comes to cleaning up, so line your baking dish with some aluminium foil.
In the ziploc bag, mix in the dry ingredients. Then add the chicken drumsticks. Shake and coat well.
Put the butter on the lined baking dish and put it in the oven for the butter to melt.
Remove from the oven and arrange the coated drumsticks.
Bake for 30-40 minutes or until juices from the thickest part of the drumstick run clear.
After half the baking time, flip over the drumsticks to get the other side cooked.
Once cooked remove from the oven and cover with an aluminium foil for about 10 minutes, this helps to keep the chicken moist.
Serve on a plate and drizzle over the juices from the baking dish.

Tada! Easy clean up.
I served the chicken with some baked sweet potatoes and sukuma wiki.
The chicken was super moist on the inside and crunchy on the outside. I think next time I’ll play around with other types of spices.

Did you marinade the chicken?
Hey Lynda? No I didn’t marinate them. I just coated and baked them. However you can marinate for at least 30 minutes then coat and bake.

Do you know where I can get oven thermometers? Or do you know how I can estimate the oven temps? I’m using Elba.
Now this is next. You know I buy full kukus so jana we ate the breasts. I foresee us doing the drumsticks today and at this rate, we’ll only be left with the wings 😀
