No better time to make a comeback than on Pancake Day! I am big pancake lover and I even pride myself in almost never messing up the first pancake. This recipe is a callback to one of the oldest pancake recipes in this blog.
Apple cinnamon pancakes with cinnamon glazed apples as a topping.

The great thing about a base pancake recipe is that you can adapt it to make just about any flavour. This recipe is a variation of my basic pancake recipe maintaining the pancake batter must-haves live maziwa mala. The acidity helps to keep the pancakes tender and fluffy. In case you don’t have maziwa mala on hand, make substitute mala using whole milk and vinegar or lemon juice. A ratio of 1 cup whole milk to 1 tablespoon vinegar/ lemon juice , then mix together to curdle the milk.
Another key factor for tender and fluffy pancakes is not over mixing the batter. This is because overmixing leads to working the gluten in the flour which results in a chewy pancake. All this to say, lumps are okay in pancake batter, you just want the flour mixture incorporated.

And of course, no pancake experience is complete without some kind of sauce or topping. This paired well with more apples in the form of cinnamon glazed apple slices. I also drizzled some butterscotch sauce to mine to elevate them further. A drizzling of honey also works great.

However you choose to enjoy your pancakes, this recipe is worth giving a try.
Apple Cinnamon Pancakes
Ingredients
- 250 grams all purpose flour approx. 2 cups
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/4 cup sugar
- 2 pink lady apples grated
- 1 1/2 cups maziwa mala room temperature
- 2 whole eggs room temperature
- 1 teaspoon vanilla essence
- Oil for cooking
For the cinnamon glazed apples
- 1 pink lady apple cut into thin slices
- 1 tablespoon brown sugar
- 1 tablespoon butter
- 1/2 teaspoon ground cinnamon
Instructions
- In a large bowl, mix flour, baking powder, baking soda, salt, sugar, cinnamon and grated apples.
- In another bowl or jug add maziwa mala, eggs and vanilla essence and lightly beat.
- Gradually whisk in the wet ingredients with the dry ingredients. Be careful not to over mix, lumps are fine.
- Heat a large pan over medium low heat, add a tablespoon of oil.
- Once oil is hot, using a quarter cup measure, pour out the pancake batter.
- Pancakes are ready to be flipped when air bubbles appear on the surface and pop.
- Cook, the other side and repeat the procedure until all the batter is done.
For the cinnamon glazed apples
- In the same pan, add all the ingredients for the cooked apples, allow the butter to melt as the brown sugar dissolves.
- Pour over pancakes and enjoy.
