Apple Cinnamon Pancakes
Fluffy apple filled pancakes.

Oil for cooking
For the cinnamon glazed apples

pink lady apple
cut into thin slices

tablespoon
brown sugar
1
tablespoon
butter

teaspoon
ground cinnamon
Instructions
In a large bowl, mix flour, baking powder, baking soda, salt, sugar, cinnamon and grated apples.
In another bowl or jug add maziwa mala, eggs and vanilla essence and lightly beat.
Gradually whisk in the wet ingredients with the dry ingredients. Be careful not to over mix, lumps are fine.
Heat a large pan over medium low heat, add a tablespoon of oil.
Once oil is hot, using a quarter cup measure, pour out the pancake batter.
Pancakes are ready to be flipped when air bubbles appear on the surface and pop.
Cook, the other side and repeat the procedure until all the batter is done.
For the cinnamon glazed apples
In the same pan, add all the ingredients for the cooked apples, allow the butter to melt as the brown sugar dissolves.
Pour over pancakes and enjoy.
Notes
Maziwa mala substitute - Mix 1 and half cup whole milk with 1 tablespoon lemon juice or vinegar. This will curdle the milk.
