Apple Cinnamon Pancakes

Fluffy apple filled pancakes.

Ingredients

  • 250 grams all purpose flour approx. 2 cups
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/4 cup sugar
  • 2 pink lady apples grated
  • 1 1/2 cups maziwa mala room temperature
  • 2 whole eggs room temperature
  • 1 teaspoon vanilla essence
  • Oil for cooking

For the cinnamon glazed apples

  • 1 pink lady apple cut into thin slices
  • 1 tablespoon brown sugar
  • 1 tablespoon butter
  • 1/2 teaspoon ground cinnamon

Instructions

  • In a large bowl, mix flour, baking powder, baking soda, salt, sugar, cinnamon and grated apples.
  • In another bowl or jug add maziwa mala, eggs and vanilla essence and lightly beat.
  • Gradually whisk in the wet ingredients with the dry ingredients. Be careful not to over mix, lumps are fine.
  • Heat a large pan over medium low heat, add a tablespoon of oil.
  • Once oil is hot, using a quarter cup measure, pour out the pancake batter.
  • Pancakes are ready to be flipped when air bubbles appear on the surface and pop.
  • Cook, the other side and repeat the procedure until all the batter is done.

For the cinnamon glazed apples

  • In the same pan, add all the ingredients for the cooked apples, allow the butter to melt as the brown sugar dissolves.
  • Pour over pancakes and enjoy.

Notes

Maziwa mala substitute - Mix 1 and half cup whole milk with 1 tablespoon lemon juice or vinegar. This will curdle the milk.
