Nutty Soy Spaghetti

Leftover spaghetti from yesterday dinner? Let’s make a quick fix.

I used the ingredients I had on hand. I included the leftover french beans and carrots stir fry from the same dinner.

What I loved about making this was that it was ready in 5 minutes. Essentially everything is already cooked so the gist is to combine and heat everything.

One caveat I’ll give is not to add salt. Remember the leftover food had been previously salted and the addition of soy sauce and peanut butter means more sodium levels.

You can however add freshly cracked black pepper or some red chilli flakes.

Some roughly crushed peanuts can also be added. I didn’t have any so I used sesame seeds.

There you have it.

Nutty Soy Spaghetti.

This quick fix can also work with other pasta shapes. Peanut butter can be substituted with other nut butters like cashew nut and almond.

If you don’t have the french beans and carrot stir fry, you can make it without it.

  • 1 heaped tablespoon peanut butter
  • Leftover french beans and carrot stir fry
  • Leftover spaghetti
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame seeds
  • Black pepper/ red chilli flakes, optional

Instructions

In a wok over high heat add peanut butter.

Once almost melted add leftover french beans and carrot stir fry.

Stir to combine.

Add leftover spaghetti and continue stirring.

Once everything is heated up, drizzle over soy sauce and mix.

Turn off heat and add sesame seeds.
