Leftover rice? Well I have the perfect recipe for you. Easy to make, perfect for a quick dinner/ lunch.
I had some pineapple on hand, the utterly delicious ones from Uganda, so I added them for that sweet kick.
Heat up your wok or any wide pan and add the cashew nuts.
Keep tossing the nuts around to ensure they cook evenly. If you are using already roasted cashews you can skip this step.
Once cooked, remove and set aside.
In the same pan add some oil and fry up your onions until translucent.
Would you believe me if I told that the food is almost done? Yep! Go ahead and set the table 🙂
Add in your leftover rice, I had some coconut rice from the night before. I add that in and combined it with the onion.
Keep stirring to ensure the rice gets warmed up evenly, once warm add back the roasted cashews.
And now for the ‘magic ingredient’ drizzle over some soy sauce. A few drops will do the trick. Not only will the soy sauce add a lovely tinge to the rice, it will enhance the flavour of the rice and just like that you are having Chinese 🙂
For the final touches, add in the pineapple cubes.
I sprinkled over some dried oregano just because I love what it does to pineapple.
Voila, your meal is ready!

Tropical Cashew Nut Rice
- Half of a medium onion, finely chopped
- Leftover rice
- Handful of cashew nuts, roasted
- Soy sauce
- Pineapple cubes
- Dried oregano, optional
- Oil for frying
Instructions
In a wok,heat some oil and fry the onions until translucent
Add the leftover rice and combine
Once the rice is warmed up, add the roasted cashews and stir
Drizzle over some soy sauce and combine
Toss in the pineapple cubes, sprinkle over the oregano and combine.
Serve and Enjoy!
