A simple chicken recipe that requires only a handful of ingredients.
Ingredients:
2 boneless skinless breasts
3 cloves of garlic, finely chopped
1 egg
5 tbsps breadcrumbs
Salt and pepper to taste
Oil for frying
Equipment:
Mallet
Using a mallet, pound each chicken breast until it is less than a quarter inch thick.
You can either put the chicken breast in a polythene bag, then pound or use some cling film one on the bottom then the other on the top of the chicken breast. Then get to pounding.
In a shallow bowl lightly beat the egg and add the garlic. Dip each chicken breast in the egg mixture.
Finally coat it with the breadcrumbs which should be seasoned with some salt and black pepper.
In a skillet, heat two tablespoons of vegetable oil. Once hot enough, gently place one of the chicken breasts. Let it cook for 4-5 minutes on each side or until the breadcrumbs turn a golden brown colour.
Flip and cook the other side. Once cooked, place the chicken breast on a paper towel covered plate to drain any excess oil.
Serve with some potatoes, sauce and stir fry veggies.

this recipe is ideal with boneless chicken breasts. For boned chicken, I’ll post a recipe soonest. Yeah two tablespoons, we are shallow frying.
