Salads! Refreshing! I enjoy salads not only because they are made with flavourful ingredients but because they can be pretty healthy when not doused with ‘unhealthy’ dressings. This red cabbage and pepper slaw is just right.
Another great thing, salads are pretty easy to make. Just cut up your veggies and prepare your dressing and you are good to go.
Other than the veggies, dressing can make or beak the salad and depending on whether you are looking to go light or heavy on the calories the selection is wide.
If you love creamy dressings, mayonnaise comes in handy and I usually add a touch of ketchup and some freshly ground black pepper. However, if you want something creamy but without all the calories, natural yoghurt dressing works beautifully.
I particularly love olive oil based dressings, so a simple vinaigrette is my go to.
Cut up your veggies.
Combine in a big bowl.
Toss the veggies together to combine.
Dress it accordingly.
I used an olive oil and lemon dressing with salt, black pepper and dried oregano
Toss the salad with the dressing.
I served the salad with some roasted potatoes! Amazingly yummy! Yumazing! Yep, I’ve just coined a word.
Serve and enjoy!
Red Cabbage and Pepper Slaw
- 1/2 small red cabbage, thinly sliced
- 1 medium sized carrot, julienne
- 1/2 red bell pepper,thinly sliced
- 1/2 yellow bell pepper, thinly sliced
- 1/2 medium sized red onion, thinly sliced
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
for the dressing
Instructions
In a bowl combine all the vegetables.
For the dressing, in a seal-able jar combine the ingredients and shake until emulsified.
Toss the salad with the dressing.
Serve and enjoy.
