Veggie Burgers

I open my freezer to see what I can prepare for dinner and I find the last pack of butter beans, I am dismayed since I don’t want to prepare them as I usually do. Normally I’d make a curry with coconut milk and serve with chapatis but this time round I wanted to push the envelope just a little bit.

After some few Google searches, I realised I could make some burgers using the butter beans. This recipe is pretty easy and the plus side is, it’s vegetarian, we all know I need more of those recipes here.

The butter beans need to be cooked, when working with beans, there is also the issue of them causing gas and the way it is not a pretty or fragrant thing. The idea is to either add a whole carrot to boil with the beans and then throw out the carrot that will be ‘gas laden’ or add around 3 -4 bay leaves with the beans and remove them  when the beans are cooked.

In a big bowl, pour in the butter beans.


Using a fork, mash the butter beans. Ensure that the mashed aren’t so watery so that they don’t fall apart when making the patties.


Now to spice up the burger, peel and wash a medium sized onion.


Chop up the onions finely.


Throw them into the mashed beans.


Season with salt and black pepper. Then for some spice add some ground coriander.


Next add some paprika.


I had some leftover cheese from the pizza so I grated some in.


Now the part to get our hands dirty, forming the veggie patties. As I was working on the patties, the buns were baking in the oven. Since my buns were sorta small, I also made small sized patties.

I started by forming all the patties and placing them on a rack.


Heat some little oil in a non stick pan, I used olive oil.


Assemble the patties, dip each pattie in an egg wash and coat it will some breadcrumbs.


Finally fry up the patties, over medium heat.


Once done, I assembled the burgers, mine were simple since I just added the pattie and a slice of avocado. Feel free to add a slice of tomato and whatever else tickles your fancy.



The patties were surprisingly delicious and the combination with the buns, just right. Funny thing, there were even more delicious the next day.

So , I dare you, be different and try some veggie burgers this weekend, not only are they delicious, they are also healthier than the non-vegetarian option.


I served them with some herbalicious potatoes.

  • 1 1/2 cups cooked butter beans
  • 1 medium sized onion chopped
  • 1 tablespoon ground coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Grated cheese, cheddar will do - optional
  • For the coating

  • Egg wash (1 egg and a tablespoon of water)
  • Breadcrumbs
  • Olive oil for frying


In a big bowl, add the butter beans.

Using a fork mash the beans.

Add the finely chopped onions and combine.

Season with the ground coriander, paprika, salt and black pepper.

Finally add the grated cheese.

Form into small round patties that are about 1/8th inch thin

In a shallow plate with the egg wash dip in your patties and then coat the patties with breadcrumbs.

In a non stick pan, heat some little olive oil and fry up the patties.

Once all are cooked, assemble the burgers as desired and serve.

This recipe yields about 18 small veggie patties.
