Ever tried making your own chicken stock at home?

It's pretty easy to do, especially if you have a pressure cooker.

In case you don't, use a large sufuria on the stove top or even better, on a jiko. Just simmer the stock, low and slow for 3-4 hours.

For this, I used ingredients that I had been saving e.g mushroom stalks, I always freeze them whenever I'm making mushrooms.
Other ingredients included, wing tips. I prefer to separate chicken wings and reserve the tips for stock.
For this batch of stock, I also had some chicken bones that I had saved from a previous dish. I'd baked some chicken thighs and since I only needed the flesh, I froze the bones.

I never salt the stock since I'll eventually use it in other dishes I prefer to control the levels of salt then.

Guys!!! Pavlova.

I'll say this, other than the temperature issues making pavlova is pretty straight forward.

Topped it with some whipped cream, fresh berries and lemon curd.

Used a recipe by the Mary Berry.

Have you had sauerkraut before?
Had lots of cabbage so I made some sauerkraut.

It's so simple, I don't know I waited this long to give it a try. One only needs cabbage and salt. I also added some fennel seeds in mine for flavouring. Delightful.

From my research, for every kg of cabbage one needs 20grams of sea salt.

I fermented mine for 10 days but a week is good, taste for sourness after some days and if it's to your liking, refrigerate.
