Gluten-free carrot cake

And yes, you can swap the gluten-free flour for all purpose flour.

Ingredients
315g gluten-free flour
1 heaped tablespoon mixed spices
1 heaped tablespoon cinnamon
1 heaped teaspoon cardamom
1 heaped teaspoon nutmeg
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1/2 cup brown sugar
1/2 cup white sugar
1 cup neutral oil
2 whole eggs
1 teaspoon vanilla essence
1/2 cup maziwa mala
1/2 cup raisins
1/2 cup sultanas
3 cups grated carrot

For the buttercream
250g unsalted buttercream at room temp
250g icing sugar
2 pinches salt
1 teaspoon vanilla essence

For the cream cheese filling
125g cream cheese at room temp
25g unsalted butter at room temp
250g icing sugar
1 teaspoon vanilla essence

I challenge us to call in our pastors, reverends, imams to be on the fore front of calling for change.
