So much for continuous posting for 30 days! Anyway I’m back and with a homemade ice cream recipe. You buy a bunch of bananas and as the days go by you realise they are ripening faster than you can eat them. What to do? Make some Chocolate chip banana ice cream.
For this healthy dessert or summertime snack you need just a few ingredients with frozen bananas being the main star. You can choose to freeze your bananas with their peels or peel, slice them up and then freeze. For my case I froze them with the peels.
For flavouring I decided to use vanilla beans mainly because I have them on hand, however you can omit them. If you want you can add a pinch of cinnamon.
In your food processor or blender toss in the frozen banana slices and the vanilla beans. Working fast is imperative since you don’t want the bananas to thaw.
I also added a tablespoon of yoghurt to help in the blending process. If you don’t have yoghurt you can add a tablespoon or so of milk.
Pulse until creamy.
Finally add your chocolate chips and combine.
Put the chocolate chip banana ice cream in a container and freeze for about 30 minutes before serving.
Top off with some chocolate shavings. Yeah! Add more chocolate to the chocolate chip banana ice cream. You can drizzle over some syrup.
Variations:
You can add chopped raisins or sultanas instead of the chocolate chips
If you are lactose intolerant you can omit the yoghurt, just let the frozen bananas thaw a little to make blending them easier.
Thirsty Thursday: Chocolate Chip Banana Ice Cream
- 3 very ripe bananas, peeled and frozen
- 1 vanilla pod, beans scraped,optional
- 1 tablespoon vanilla yoghurt
- A handful of chocolate chips
Instructions
In a food processor or blender add the frozen banana slices and the vanilla beans.
Pulse for two minutes or so then add the vanilla yoghurt.
Once creamed add the chocolate chips and combine.
Put the ice cream in a tub and freeze for about 30 minutes before serving.
Serve as desired.
