Who’s busy making soup in the middle of sunny January? Well me!
Ingredients:
3 medium sized heads of broccoli
1 medium sized potato, diced
1 medium sized onion
4 cloves of garlic sliced
2 cups water or some stock
1 tablespoon of vegetable oil
In a sufuria add the oil and fry the onions and garlic. Season with some salt and pepper.
Fry until the onions are translucent then add the potatoes.
Stir around the potatoes and let them lightly brown.
Add the water/ stock. Cover and let it simmer for 25 minutes or until the potatoes and broccoli are cooked.
Now the fun part, the blender. In case you have an immersion blender just turn off the heat and blend away.
I used my handy blender. Since the liquid is hot, ensure to cover the blender well and also don’t fill it up.
Once blended, pour it back into the sufuria. Heat it up once more and taste for seasoning and adjust accordingly.
Serve with some croutons or toasted bread and enjoy.
