Sweet treats that my brother ( @irauka_mtaka_yote ) made for me to celebrate my birthday.

3. Mini cheesecakes (these had a spiced digestive biscuit base that he made from scratch). Delicious.

My daughter called it a masterpiece.

It's my birthday today!
Keeping with tradition, I baked my cake and this year I got y'all to help me settle on flavour, filling and frosting.

I present, two tier lemon cake with mixed berry filling and white chocolate ganache frosting.

Ever tried making your own chicken stock at home?

It's pretty easy to do, especially if you have a pressure cooker.

In case you don't, use a large sufuria on the stove top or even better, on a jiko. Just simmer the stock, low and slow for 3-4 hours.

For this, I used ingredients that I had been saving e.g mushroom stalks, I always freeze them whenever I'm making mushrooms.
Other ingredients included, wing tips. I prefer to separate chicken wings and reserve the tips for stock.
For this batch of stock, I also had some chicken bones that I had saved from a previous dish. I'd baked some chicken thighs and since I only needed the flesh, I froze the bones.

I never salt the stock since I'll eventually use it in other dishes I prefer to control the levels of salt then.

Guys!!! Pavlova.

I'll say this, other than the temperature issues making pavlova is pretty straight forward.

Topped it with some whipped cream, fresh berries and lemon curd.

Used a recipe by the Mary Berry.
