Breakfast Potatoes

Excited about 2019, I’m expecting my third child, yeah, third and the baby is due later in the month. It’s safe to say the Leo tunapika? household is growing so more background noises in my videos.

I want to start off the year by sharing this very easy breakfast potatoes recipe, honestly it’s so quick and delicious. 

You only need a handful of ingredients.

Start by prepping the potatoes, peel and cube the potatoes.

This recipe calls for deep frying, so get the oil heated as you cube the potatoes.

Now, I want to let you in on a secret, looking to get the perfect fry? Do it twice.

Yes, fry the potatoes twice. the first fry is to get the potatoes cooked on the inside while the second fry crisps up the exterior.

Once the oil is heated add the potatoes.

Another key thing to remember when deep frying is, never crowd the pan. Crowding leads to reduction of the temperature of the oil, thus the potatoes take longer to cook and even soak up some of the oil.

This is how the potatoes look after the first fry.

For the second fry, ensure the oil is extra hot. The potatoes will cook for about 1 – 2 minutes before crisping up so don’t take your eyes off your pan.

Once golden, take off the heat and then season.

Ensure you season when the potatoes are still hot/ warm so that the seasoning thoroughly coats them.

My go to seasoning combo is paprika, salt and freshly ground black pepper.

Add to the bowl and toss to coat the potatoes.

And we are done, serve your potatoes and enjoy.

Crispy on the outside and fluffy on the inside.

  • Potatoes, peeled, washed and cut into 1cm cubes
  • Oil for deep frying, sunflower oil is a good choice
  • Paprika
  • Salt
  • Freshly ground black pepper

Instructions

In a deep frying pan , pour in the oil and heat it up.

Once the oil is hot enough, you can test this by tossing in one of the potato cubes.

Add some of the potato cubes, don't crowd the pan.

Let the potatoes cook for about 5 minutes. The first fry is to cook the inside of the potatoes.

Remove the potatoes from the oil onto a paper towel lined plate.

Repeat the process for all the potato cubes.

For the second fry crank up the heat and add some of the pre fried potato cubes.

The potatoes will take 1 - 2 minutes to crisp up and turn a light golden colour.

Remove from heat, season with paprika, salt and black pepper.

Toss to coat the potatoes.

Serve and Enjoy.
