Garlic French Beans with Peanuts

French beans, green beans , string beans or mishiri as we Kenyans fondly call them are pretty delicious. What better way to take them up a notch than adding some peanuts?

Vegetables like french beans,broccoli, cauliflower are easily transformed when sauteed in some garlic. For this quick fix, I settled on just three ingredients, yes just three.

This is a quick stir fry recipe that is ready in under ten minutes and goes well with some fried eggs.

In a wok,heat some olive oil then add the minced garlic. Heat until fragrant. You don’t want to burn garlic since it becomes bitter.

Then add in the french beans. I love leaving the beans as is or halving them.

garlic-french-beans-peanuts-leotunapika-2Now the fun part begins, stir the french beans so that they get coated with the garlic and oil. Then season with some salt and black pepper.

Keep stirring and tossing them in the wok so that they cook evenly. The idea is for the green colour to pop. You want the french beans al dente, cooked yet firm to the bite. Stirring for about 6 to 8 minutes does the trick.

Remove from the heat.

There you have it, easy, quick and delicious Garlic french beans with peanuts.

Note: In the event you choose to blanch the french beans first, then only saute in the oil for 3 -4 minutes before adding in the peanuts.

Amazing is how my husband described them and my toddler kept munching on them. Trust me,  you know something is a hit when a toddler asks for seconds.

Garlic French Beans with Peanuts

  • 350 g french beans (about 3-4 handfuls),ends trimmed and washed
  • 4 cloves of garlic,minced
  • 2 tablespoons olive oil
  • A handful peanuts, roughly cut
  • Salt and freshly ground black pepper to taste.

Instructions

In a wok, heat the olive oil and fry the garlic until fragrant.

Add in the french beans and stir.

Add salt and black pepper.

Keep stirring and tossing the french beans for about 6-8 minutes or until al dente.

Add in the peanuts and toss.

Taste for seasoning and adjust accordingly.

Remove from heat.

Serve and enjoy.

  2. Awesome recipe. I made it with sunflower seeds because my son has an allergy to nuts. It was a good alternative.
