Mama’s All in One Meat Stew

I have been meaning to post this recipe for the longest time but true to my nature I keep postponing.

Anyway, this is a recipe I learnt from my mama, it’s something she used to make for lunch when we had closed school for the holidays. As the name suggests it’s a one pot meal which has all manner of ingredients. To top if off my mother used to serve it on one large plate and all four of us, that is her, my two brothers and I would dig in with much pleasure.

After getting married, I told the hubs of this recipe and he  was more than eager to prepare it. I am not the best beef cook, so when it comes to matters beef, I normally surrender the kitchen to hubby 🙂 We have made this recipe severally in the Leo Tunapika? household and I bet it can work with any other meat, that is chicken or goat (I’ve tried goat and it  worked fine)

Ingredients:

1/2 kg beef cut into cubes

5-7 medium sized potatoes, peeled, washed and halved

3 carrots roughly cut

1 coloured bell pepper diced (optional)

2 medium sized onions chopped

4 cloves of garlic minced

3 tomatoes wedged

5-7 leaves of swiss chard (what we call spinach) washed and roughly cut by hand

Salt and pepper to taste

Serves 4- 5 people

Psst: We don’t use oil  when cooking beef but in case you do then  by all means use it in this recipe.

In large pan, add the beef cubes.

Let the meat brown and cook in its own juices. Cover the pan and let the meat cook for 15 to 20 minutes. Next, add in the potatoes.

Stir, to ensure the potatoes get all the meaty goodness.

Cover and let the potatoes cook down a bit, you can add a little water to give the potatoes a head start.

After 10 minutes, add in the onions and garlic.

At this point, you can season with some salt and pepper and feel free to add your spice of choice e.g garam masala.

Add in the tomatoes, cover and let them cook down.

We are almost done, add in the carrots. In case you don’t like your carrots crunchy you can add them together with the potatoes.

Finally we add our spinach err swiss chard

Cover and let the greens cook for 3 -5 minutes.

Stir everything together, serve on a big plate and enjoy with your family or friends.

    • Hey Fanis, he he it’s not an obvious question. You can boil you meat first. However, I don’t boil one,I just cook as it is 🙂

    I just joined your group of fans, here’s a recipe you can try for the beef stew as well. Layer everything you’ve got apart from dhania and tomatos.
    Put the beef in first, then onions, then carrots(we like them very cooked, a certain someone in the family does not like to see them when eating, ati chakula inakaa orange. 🙂 ) godgets, green peppers and season with salt. No cooking oil. Let it boil on its on goodness. Then after the meat smells cooked, stir thoroughly, ensure all youradd-os, are soft and cooked, then add dhania and tomatoes. by the time they are cooked, the ,eat should be finely cooked. 🙂
